What you need:

  • 1 large baguette
  • 1 kilogram ground beef
  • 4 eggs, lightly beaten
  • 1 clove garlic, minced
  • 1 cup thinly sliced Provolone cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup bread crumbs
  • 2 tablespoons minced flat leaf parsley
  • 2 teaspoons kosher salt

Combine ground beef, eggs, garlic, ricotta, parmesan, bread crumbs, parsley and kosher salt in a large bowl. Using clean hands, mix ingredients well. Form into golf-sized meatballs. Spray the grill racks with cooking oil and arrange meatballs on it. Cook on a pre-heated grill over medium heat for 8 to 10 minutes or until evenly browned on all sides and cooked through. Divide baguette into 4 sandwiches. Divide provolone cheese into the 4 sandwiches and place 3 meatballs in each. Add flavour with choice of condiments.

  • Vanilla ice cream for serving

In a small pan, mix together maple syrup, butter, vanilla extract and kosher salt. Cook over low heat, stirring occasionally, until butter has melted. Remove from heat. Cook apricots cut side down on a pre-heated grill over medium heat, brushing with maple mixture while cooking, until tender, about 8 to 10 minutes.
