Safety is top priority
You don’t want anyone getting sick from your barbecue so it is important to practice some safety precautions when it comes to preparing grilled food. When handling raw and cooked meat, use separate utensils, plates and cutting boards to avoid cross contamination. Any leftover marinade should be discarded or boiled if will still be used as a sauce.
Clean while the grill is hot
It’s common sense that a grill should be kept clean at all times. This means that it should be cleaned every after use. But let’s face it – not all of us have the time to do so. So work on keeping your grates clean at least. An easy way to do this is to use a long-handled wire grill brush to scrape off charred debris while you’re pre-heating as the dirt ill come off easier.
Don’t let your food stick
Plenty of food stick to the grates even when the grill is clean. While your grill is pre-heating rub a paper towel soaked in vegetable oil on the rack using long-handled tongs. This will not just help keep your food from sticking but will also remove dirt and debris from your last barbecue session. Keep in mind that using cooking spray on a hot grill isn’t ideal.
Know the right temperature
Food that is cooked on the grill at the right temperature will less likely to stick on the grates, will be moist inside, will be cooked evenly and most of all, will be juicy. Pre-heating for 15 to 25 minutes is a good practice to properly cook any grilled food and to kill of any bacteria. Cook at a temperature of 200-250F for low, 300-350F for medium, 350-400F on medium high and 400-450F on high.
Experts recommend using additive-free lump charcoal (charred wood) if you use a charcoal grill for a safe barbecue session resulting to a clean-tasting and delicious smoky food. Briquettes contain additives such as lighter fluid and paraffin. Lighter fluid, on the other hand, may leave residue on food and can be dangerous if not properly handled.
