Cream of tartar is an acidic by-product that gets produced from the wine making process. The substance is left behind in the barrels after the wine has been fermented then gets turned into the white powder we all know as cream of tartar.
In the confectioner’s kitchen, the powder is used to help activate baking soda. Baking soda is an alkaline substance that sometimes needs assistance in order to work in a cake mixture or other sweet treats. In most stores you will see two different bottles; one called baking soda and one called baking powder. Did you know that the baking powder already has cream of tartar in it?
The best known use for this ingredient is when whipping egg whites. You will notice that once whipped, the egg white will collapse. With a pinch of cream of tartar, the whipped egg white will be stabilized and last longer as the thick white ingredient.
A chef also will use the cream of tartar when working with hot sugar. When cooking sugar at high heat it could crystalize making unsightly nobs in the melted sugar. When adding this ingredient you interfere with that process of crystallization making a smoother and more presentable substance.
Cream of tartar is an acidic powder that can be used for many other activities in the home. The acid in the powder repels ants that gather in an area. Ants do not like acidic liquids or objects and often avoid areas that have that kind potency around.
It can also be used to get rid of tough stains where water is in contact with the surface. Mixing hydrogen peroxide and the tartar together to make a paste can make an incredible cleaning agent. Use the mixture around faucets that have been stained and kitchen surfaces too.
Sometimes, our clothes get stained due to sweat or sunblock that cause collars to become yellow. Dampen the collar with some water using a cloth. Sprinkle some cream of tartar onto the shirt and rub it into the stain. From this point you can toss it in the washing machine as normal.
Now you know what some of the uses of cream of tartar are and exactly what it is.
