Quick and Easy Crockpot Dishes For The Whole Family

There’s nothing better than enjoying a delicious home-cooked meal with the people you love. If you want to cook something special for the whole family for lunch or dinner, take out your slow cooker and let it do its magic. Start with any of these quick and easy crockpot dishes!
Mediterranean Style Artichoke and Beef
What you need:
- 1 kilogram stewing beef
- 4 cloves garlic, chopped
- 1 onion, diced
- 1 bay leaf
- 1 can artichoke hearts, drained and halved
- 1 can diced tomatoes
- 1 can tomato sauce
- 4 cups beef broth
- 1 tablespoon grapeseed oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1/2 teaspoon ground cumin
In a pot over medium high heat, heat the grapeseed oil and cook the beef for 2 to 3 minutes per side or until browned. Place browned beef in a slow cooker along with garlic, onion and artichoke hearts. Stir in bay leaf, beef broth, tomatoes and tomato sauce then season with basil, oregano, parsley and cumin. Cover and cook on low for 7 hours.
No Refry Refried Beans
What you need:
- 1 onion, peeled and halved
- 1/2 fresh jalapeno pepper, seeded and chopped
- 9 cups water
- 3 cups dry pinto beans, rinsed
- 2 tablespoons minced garlic
- 5 teaspoons salt
- 1 3/4 teaspoons freshly ground black pepper
- 1/8 teaspoon ground cumin
Place onion, jalapeno pepper, pinto beans and garlic in a crock pot. Season with salt, black pepper and cumin. Add the water to the pot and stir to combine ingredients well. Cover and cook for 8 hours on high, adding more water as needed. When ready, strain pinto beans and reserve the liquid. Mash the beans, adding some of the reserved liquid to attain desired consistency.
Tasty Chicken Adobo
What you need:
- 1 1/2 kilogram whole chicken, cut into pieces
- 8 cloves garlic, crushed
- 1 sweet onion, sliced
- 3/4 cup low sodium soy sauce
- 1/2 cup vinegar
Mix together garlic, onion, soy sauce and vinegar in a bowl. Stir to combine ingredients well. Place chicken pieces in a slow cooker then pour soy sauce mixture all over it. Cover and cook for 6 to 8 hours on low. Best served over cooked rice.
