A slow cooker is a good thing to have in the kitchen especially if you’re cooking for a big group of people. It can be helpful when you host a party and have to prepare multiple dishes but don’t have enough time. For your next party, why not cook some unique dishes that guests don’t normally encounter at gatherings? Here are some unique slow cooker ideas for dishes to try:
Crock Pot Honey Cheese Pork Roast
What you need:
- 2-kilogram boneless pork loin roast
- 2/3 cup grated Parmesan cheese
- 1/2 cup honey
- 1/4 cup chicken broth
- 3 tablespoons soy sauce
- 2 tablespoons chopped garlic
- 2 tablespoons olive oil
- 2 tablespoons cornstarch
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 teaspoon sugar
- 1/2 teaspoon salt
Mix together Parmesan cheese, honey, soy sauce, garlic, olive oil, basil, oregano and salt in a bowl. Stir until ingredients are well-combined. Place the roast in a slow cooker then pour honey mixture all over meat. Cover and cook for 5 to 6 hours on low. When ready, strain juices from the slow cooker and pour in a pan. Combine chicken broth and cornstarch in a bowl and add the mixture to the pan. Add the sugar. Stir and simmer over medium heat until sauce has thickened. Slice the pork roast and serve topped with the glaze.
Rich Peanut and Sweet Potato Soup
What you need:
- 1 1/4 kilograms sweet potatoes, peeled and chopped
- 1 large onion, chopped
- 3 cloves garlic, chopped
- 1 2-inch piece ginger, quartered
- 1 can diced tomatoes
- 4 cups vegetable stock
- 1/3 cup creamy natural peanut butter
- 1/3 cup fresh cilantro
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cumin
- 1 teaspoon Kosher salt, plus more to taste
- 1 teaspoon Ground black pepper, plus more to taste
- Chopped roasted salted peanuts for garnish
Place sweet potatoes, onion, garlic, ginger, tomatoes, vegetable stock, cinnamon, cumin, salt and pepper in a crock pot. Cover and cook for 7 to 8 hours on low or 3 1/2 to 4 1/2 hours on high. When ready, discard ginger then add peanut butter and cilantro to the pot. Stir to mix ingredients well. Using a blender or food processor, puree mixture until smooth. Serve topped with peanuts and cilantro.
